Ingredients
For the Trifle:
- 175g Bonne Maman madeleines
- 75g Bonne Maman berries and cherries conserve
- 200ml double cream
- 1 pinch ground mixed spice
- 4 meringue nests, roughly chopped (plus extra to decorate)
- 1 tbsp roasted chopped hazelnuts
- Cherries and blackberries, to serve (optional)
Winter Berry Compote:
- 450g frozen black forest fruits
- 1 tbsp golden caster sugar
- ½ tsp ground cinnamon
- 1 tbsp cornflour, dissolved in 2 tbsp cold water
Advocaat Custard:
- 35g custard powder
- 250ml whole milk
- 397g condensed milk
- 150ml Advocaat
Method
1. Make the Winter Berry Compote:
- Gently heat the fruit, sugar, cinnamon, and 50ml water in a pan, stirring occasionally, for 5 minutes until the fruit softens and releases its juices.
- Add the dissolved cornflour and cook for 1 minute, stirring until thick and jammy. Cool completely.
2. Prepare the Advocaat Custard:
- Mix the custard powder with a little milk to form a paste.
- Heat the remaining milk and condensed milk in a saucepan, stirring until almost boiling.
- Gradually pour the hot milk into the custard paste, stirring until smooth.
- Return to the pan and heat gently, stirring until thick. Remove from heat, stir in 100ml Advocaat, and cool with baking parchment covering the surface.
3. Assemble the Trifle Base:
- Halve the madeleines lengthways and sandwich together with a little conserve.
- Cut each into halves and arrange in a 1.2-litre trifle bowl, covering the base. Drizzle with the remaining 50ml Advocaat.
4. Layer the Custard and Compote:
- Spoon the cooled custard over the madeleines and level with the back of a spoon.
- Top with the berry compote, level again, and chill for 3-4 hours.
5. Add the Cream and Toppings (Just Before Serving):
- Whisk the cream with mixed spice to soft peaks, fold in chopped meringue, and spoon over the trifle.
- Sprinkle with hazelnuts, extra meringue, cherries, and blackberries.

Cook’s Tip:
This trifle can be prepared up to 2 days in advance without the cream layer. Add the cream and toppings no more than 2 hours before serving.
