Hearty Beef Stew with Mustard Dumplings Recipe

As the colder months settle in, there’s nothing better than the comforting aroma of a hearty beef stew wafting through your kitchen. This recipe, complete with tender beef and golden mustard dumplings, is the perfect winter warmer—and it’s easy to make!

Ingredients
For the Stew:
750g stewing steak, chopped into bite-size chunks
2 tbsp plain flour
2 tsp soft brown sugar
½ tsp salt
½ tsp freshly ground black pepper
½ tsp ground nutmeg
1 tsp dried mixed herbs
1 large onion, peeled and sliced
400ml beef stock
1 tbsp Worcestershire sauce
2 tbsp tomato ketchup
1 tbsp red or white wine vinegar
110g button mushrooms
For the Dumplings:
140g cold butter, diced
250g self-raising flour
1 tbsp dried mixed herbs
150ml cold water
2 tsp Dijon mustard
Method
Step 1: Prepare the Oven
Preheat your oven to 140°C.
Step 2: Start the Stew
In a large casserole dish that’s oven-safe, coat the stewing steak evenly with the plain flour.
Step 3: Combine Ingredients
Add the soft brown sugar, salt, pepper, nutmeg, dried herbs, sliced onion, beef stock, Worcestershire sauce, tomato ketchup, vinegar, and mushrooms to the dish. Stir well to combine.
Step 4: Slow Cook the Stew
Cover the casserole dish with a tight-fitting lid or foil and place it in the oven. Let it cook for 2½ hours, stirring occasionally to ensure even cooking. Once the meat is tender, increase the oven temperature to 180°C.
Step 5: Prepare the Dumplings
While the stew finishes cooking, make the dumplings. In a bowl, rub the diced butter into the self-raising flour until the mixture resembles breadcrumbs. Stir in the dried herbs.
Mix the water and Dijon mustard together, then pour it into the flour mixture. Use a fork to combine until a slightly sticky dough forms.
Step 6: Add Dumplings to the Stew
Remove the lid from the casserole dish and give the stew a final stir. Drop spoonfuls of the dumpling mixture on top, creating a single layer.
Return the casserole to the oven and bake for 20-25 minutes, uncovered, until the dumplings are golden and fluffy.
Serve and Enjoy
Ladle the stew into bowls, ensuring each serving gets a dumpling or two. Pair with crusty bread or a simple side salad for a complete meal.
