Celebrate the magic of the season with this Festive Cherry & Spice Strudel, a showstopping dessert that will make your Christmas table sparkle. With buttery, flaky pastry, a rich cherry filling, and a subtle touch of festive spice, it’s perfect for Christmas Day indulgence. Simple to prepare but stunning to serve, this treat will have your guests reaching for seconds!

๐ฒ Ingredients
- 500g frozen cherries
- 150ml water
- 150g sugar
- 50g cornflour
- 1 lemon (zest and juice)
- ¼ tsp ground cinnamon
- โ tsp ground star anise
- 3 puff pastry sheets, partially thawed
- 1 egg, lightly beaten
๐ซ Method
Prepare the Cherry Filling:
- Quarter the frozen cherries, placing half in a small bowl and the other half in a medium saucepan.
- Add water, sugar, cornflour, lemon zest, lemon juice, cinnamon, and star anise to the saucepan. Mix well.
- Cook over medium heat, stirring constantly until the mixture thickens and bubbles.
- Remove from heat, stir in the remaining cherries (including any juice), and let the mixture cool completely.
Assemble the Strudel:
- Preheat the oven to 180หC.
- Place one sheet of puff pastry on a board lined with baking paper. Lightly score the pastry into three equal sections.
- Spread one-third of the cooled cherry filling down the center section, leaving a 2cm border at each end.
- Using a sharp knife, make diagonal cuts on either side of the filling, about 1cm apart, from the filling to the edge of the pastry.
- Starting at one end, fold a pastry strip over the filling, then alternate sides until the filling is fully enclosed. Pinch the ends to seal.
- Brush the strudel with beaten egg. Repeat for the other two pastry sheets.
Bake to Perfection:
- Keeping the strudels on the baking paper, place two on a universal tray (trim the baking paper if needed) and the third on a separate tray.
- Bake for 35 minutes or until beautifully golden.
